Chicken, a popular meat to use in a lot of Filipino recipes. It is cheap, fast and easy to cook and very versatile.

Fried, stewed, roasted or even just a rekado, the chicken or manokis the cheaper alternative to beef and pork.

Which one to use, White or Dark meat, you might ask? White meat, or the breast section is very lean and can tend to be dry when cooked for a long time.

Use the white meat as meat filling for Empanada, or rekado for Pancit Bihon or Pancit Canton as they look more appetizing when used as topping.

On the other hand, the Dark meat which consist of the legs and thighs are for flavorful dishes where you need to cook the meat for more than 20 minutes.

The longer they cook, the more flavorful and richer the dish becomes.
