Lomi is a popular food for Filipinos, it is a Filipino-Chinese dish na gawa sa egg noodles.

Usually pag bumibili kami ng noodles sa market, maraming different sizes of noodles, lahat halos are called miki but with different sizes. The thick one ang pang "lomi".

This has always been one of my favorites, I always ask my Nanay to cook for me, especially during rainy days.

Nanay's lomi is always the best!

1/2 Kilo Lomi noodles

1/2 Kilo Shrimps

1/4 Kilo Squid balls

8 cups shrimp broth
or 8 cups water and 1 Knorr Shrimp Cubes

2 tbsp. Soy Sauce

2 pcs. eggs, beaten

2 tbsp. cornstarch dissolved in 2 tbsp water

1 pc Onion, minced

5 cloves Garlic

Salt and pepper to taste

How to Make

1  Remove the head and shells of the shrimp. Chop the head or place in a food processor with 1/4 cup water to make the concentrated shrimp broth.  Strain and set aside.

2  Saute onion and garlic, add the squid ball & 2 tablespoon soy sauce, add 8 cups water and shrimp cube and bring to a boil. Add the lomi noodles,

3  Add the slurry or the cornstarch dissolved with water to make the soup thick.  Bring to a boil and stir until thick.

4  Add the shrimps and beaten eggs and continue stirring.

5  To serve,  top with some sliced spring or green onions.

Can you make ahead?  Not really.  The noodles will absorb the liquid and make the soup too thick.  You could,  however,  cook everything but add the noodles,  shrimp and slurry when you are ready to serve.

Why add the shrimps in the end?  Shrimps need 1-2 minutes to cook in boiling liquid and will tend to be rubbery when overdone.

Vegetable options:  Carrots, cabbage, zucchini, celery if preferred.

Topping suggestions:  Boiled egg(quartered), Chicharon(crushed)
