Pork Guizo is stewed pork with liver and chorizo, just like menudo, except that it is all meat.
I first learned about this dish when my aunt from Tarlac cooked it for me.
It is like a meat-lover's menudo, my kids love it because they would normally set aside the vegetables in the menudo and eat just the meat.
My aunt marinated the meat in soy sauce and calamansi juice, then sauteed in garlic and onion and added the tomato sauce.
She cooked it low and slow until the meat was fork tender and the sauce thickened, before adding the chorizo and pork liver.

INGREDIENTS
1 Mix together the soy sauce and calamansi juice and divide into two.
2 Marinate the pork and liver separately in calamansi/soy sauce for an hour.
3 Saute the garlic and onion and add the pork, cook until slightly fried.
4 Add the tomato sauce, sugar and the marinade.
5 Pour in water and simmer for 40 - 45 minutes or until the meat is fork tender and the sauce thick.
6 Add the chorizo and pork liver and simmer for another 5 minutes.
7 Serve with steamed white rice and enjoy!
